Vegan Bites: Tabbouleh & Garden Greens


Gluten-free goodness!!
Quinoa Tabbouleh
~2c cooked quinoa (rinse quinoa prior to cooking, to remove toxic saponins)
~handful of each flat-leaf parsley, cilantro
~cherry tomatoes, chopped
~red onion, minced
~spring onion, sliced
~juice of lemon
~salt to taste
While cooking quinoa prep veg and herbs.
Toss together with cooled quinoa.
*for variation/increased nutrients, add any of the following: black olives, avocado slices, toasted pine nuts


Miss O & C were busy preparing a hand-picked garden salad, made of mesclun mix, purslane, cilantro, nasturtium flowers and a few shreds of lemon balm! Yum!
