Vegan Bites: Kale, Beet & Avocado Salad

Toronto houses so many amazing places for herbivores, this one happens to be on the list.
...and happens to have published their secret recipes in a book!

Kale, Beet & Avocado Salad
~3 beets, peeled
~1 bunch kale
~1 spring onion
~handful flatleaf parsley
~Salad Science dressing
Cube and toss beets in olive oil and salt.
Bake until tender.
Lightly steam kale. Cool and toss in dressing.
Add spring onion, parsley and slices of avocado.
Top with toasted pine nuts and drizzle in more dressing.
