Vegan Bites: Cashew Pesto

Not the prettiest thing to photograph.
However, the yum factor rated well.
Commercially-made pesto is often created with Parmesan cheese, but Ms. Prescott came up with a flavourful alternative for dairy-free families.

Cashew Pesto
 ~1-2 cloves garlic
~olive oil
~handful basil, parsley
~1/2c cashews (soaked 4 hours)
