Vegan Bites: Butternut Squash & Orange Cake

Big hit. We didn't even complete the icing/filling/jam bits. Just the cake part.
We subbed in a Dutch 'mixed spice' in place of cinnamon and added some dried ginger too.
Maple syrup is the only sweetener, combined with butternut squash and a hint of orange, it was a fantastic nod to Canadian Thanksgiving.

We've made two more rounds since, as breakfast cake.
