Vegan Bites: Black Bean Burger & Sweet Potato Fries


Always on the lookout for a good burger recipe, these black bean burgers were gobbled up, even by the pickiest amoung us! The one downfall, they contain flour, so are not gluten-free unless you change up your flour choice.
Sweet potatoe fries were even eaten by the pickiest of us all! (the non-vegan!)
Black Bean Burger
~1lB mushroom, sliced
~4 cloves garlic
Fry mushroom & garlic in coconut oil.
Remove from heat and add...
~2c cooked black bean
~1 baked sweet potatoe
~3/4c flour
~1/3c chia seed
~1T smoked paprika
~1t salt, onion powder
Mash together with hands.
Form patties.
Fry 3-4 minutes each side (or bake in 350 oven, for 30 minutes, turning at the halfway.)
Since we were baking the fries, we baked the patties, instead of frying.
Sweet Potatoe Fries
~2-3 sweet potatoes, cut as desired
~1T coconut oil
~salt
Rub coconut oil on raw potatoe with hands.
Sprinkle with salt and bake at 350 for 20-30 minutes.

Smoky Coconut 'Bacon'

I've read about these and seen them on sale in health food stores. Remarkably, when you add some spices to coconut and toast it, it tastes similar to bacon. I don't miss bacon, but the flavour is excellent on the burgers and adds a little crunch.
Smoky Coconut 'Bacon'
~1c flaked coconut
~1T Braggs/tamari
~1t smoked paprika
Toss and toast.
