Vegan Bites: Flourless Chocolate Cake

Not only is this recipe free of gluten, but it's full of chickpea's and beets!
They were licking the bowl and couldn't wait for the baked version!
Extra yum topped with Chocolate Avocado Icing:)

Flourless Vegan Chocolate Cake
~1 1/2c chickpeas
~1c cooked beets
~1/2c syrup/honey
~1c carob
~1t baking powder
~1t vanilla
~1/4t salt
~1/4c coconut oil
Process ingredients in processor until smooth.
Pour in greased pie pan. Bake at 350 for 45 minutes.
Cover with foil and bake an additional 30-40 minutes.

We made some modifications as usual, but the inspiration came from 'But I Could Never Go Vegan'.
